The stuffed cherry tomatoes with eggplant and pepper dip are an incredibly tasty appetizer, suitable for any special occasion. Here's how to prepare it.
The cherry tomatoes are washed, then with a sharp knife cut their upper part (like lids) and the inside is carved out.
Turn them into a plate to drain off the excess liquid.
The eggplant and peppers are roasted and cleaned from the flakes and seeds. Put them in a blender with a little salt, garlic cloves, half a tablespoon of mustard and mayonnaise.
All of the products are blended, until a homogeneous mixture is obtained. The carved tomatoes are filled with the delicious dip.
The lids of the spectacular stuffed cherry tomatoes are placed on top and they are ready to be served.
