Ingredients

  • For the biscuit dough
  • eggs - 1 pc.
  • brown sugar - 1/3 cup
  • vanilla - 1 packet
  • sunflower oil - 6 tbsp. + 1 tbsp. (for kneading)
  • all - purpose flour - 1 and 1/2 cups (or whole grain)
  • For the stuffing
  • cherries - 1 cup (cut in halves)
  • brown sugar - 5 tbsp.

How to make

In a deep bowl, mix the egg with the brown sugar, unrefined sunflower oil, vanilla and gradually adding the flour (all-purpose or wholemeal) and knead a non-stick dough.

Once it absorbs the flour, in order for the dough to soften, while kneading, add another 1 tbsp. of sunflower.

Prepare the cherry filling by mixing the cleaned and sliced ​​fresh cherries with brown crystal sugar in a deep bowl and mash them lightly.

Divide the dough for the delicious fruit pie into two parts - one slightly larger than the other.

Roll the larger ball with a small rolling pin, carefully onto baking paper, into a thin round crust (about 5 mm), so that a slightly larger size is obtained from the bottom of the small baking pan, in which we will bake the pie.

Together with the piece of baking paper, transfer the crust into the baking pan and smooth out the bottom, but leave the edges sticking up. The appropriate size of the small round baking pan is 8″ (20 cm) in diameter. Spread the cherry filling on the dough.

Separately roll out the second part of the dough and cut it into long strips, which are carefully transferred with a spatula and arranged at a distance on the filling - half horizontally and the other half vertically (as in the photos).

If desired, we can weave them, but carefully, because they break easily. Then fold the outer edges of the lower crust - inward, in order to close up the cherry pie on the side.

With the rest of the dough for the strips, we can make a small bowl for decoration (like the one in the photos), which we can put in the middle of our cherry pie and after baking, we can put a beautiful cherry in it.

Bake the pie at 360°F (180°C) for about 15 minutes and another 5 minutes only on the underside. You should not bake it too much, as the biscuit dough will harden when it cools.

Once it is ready and it cools down, cut it into pieces like a cake and serve it for breakfast, optionally with fresh cherry juice.
