How to make
First mix together the dry ingredients for the dough. Add the butter, cut into cubes, then grind the mixture with your hands until it turns to crumbs.
To it, add as much water as needed to knead a soft dough (about 4-5 tablespoons). Wrap the dough in foil and put it in the fridge for about half an hour until cooled.
Meanwhile, clean the cherries of their pits, then mix them with the sugar, starch, vanilla and a few tablespoons of water.
Leave the mixture to boil until thickened, stirring occasionally. Once the dough has cooled, roll out 2/3 of it as thinly as needed for it to cover the bottom and walls of the oven dish.
Pour on the prepared cherry mixture on top. Roll out the remainder of the dough into strips, then arrange them on top of the pie in a grid pattern. Bake in a preheated oven at 360°F (180 °C) for 30-35 minutes.
