How to make
Dissolve the yeast in slightly warmed water with a pinch of sugar and two tablespoons of the flour. Leave it to activate.
Sift the flour into a bowl and mix it with the salt, thyme and parmesan powder.
Finely chop the olives or blend them in a blender into a smooth mixture.
Add the flour, yeast and olive paste to the flour and knead the dough, which you can knead on a floured surface, by adding more flour, if necessary, until you achieve a smooth medium soft and non-stick dough.
Form the dough into a ball, grease it and put it in a clean plastic bag. Refrigerate it for 30-40 minutes.
Roll out the fragrant dough into a thickness of approximately 0.1″ (0.3 cm). Cut it into strips of about 0.6/4″ (1.5/10 cm) and arrange them in a greased or covered with baking paper tray (I bake them in two portions).
Bake the bites in a preheated oven at 390°F (200 degrees) for 15 minutes.
