How to make
Wash the fresh tomatoes and arrange them in a baking pan as they are - whole.
Clean the garlic cloves from the outer layer and also place them whole and unpeeled next to the tomatoes along with the celery stalk. Add a little salt, drizzle with olive oil and bake in a preheated oven at 200 degrees.
Once they have cooled, peel the large tomatoes and garlic and cut them into bulky pieces into a bowl along with the celery. Add the fresh basil and parsley leaves, sun-dried tomatoes and cayenne pepper (optional), add the sauce from roasting, the lemon juice and blend. Try the sauce and add more salt if needed.
Boil the pasta according to the manufacturer's instructions. Strain it and serve it immediately drizzled with fresh sauce and garnished with whole roasted cherry tomatoes.
This is a healthier spaghetti, capellini or any kind of fine pasta sauce. That's why it is not fried, it is light, fresh and very tasty. Try it and enjoy it.
