Ingredients

  • red beans - 0.9 lb (400 g) boiled or canned
  • chickpeas - 0.9 lb (400 g) boiled or canned
  • green olives - 1 cup (stuffed with peppers)
  • brown olives - 1 cup
  • black olives - 1 cup
  • spring onions - 2 bunches
  • mint - 1 bunch
  • mint - 2 - 3 stalks
  • salt - by taste
  • apple cider vinegar with honey
  • olive oil
  • black pepper mix

How to make

According to the original recipe you can boil the beans and chickpeas, but for those who don't have as much time and given that stores sell ready-made ones, you can also use canned beans and chickpeas.

Strain the canned red beans and chickpeas and pour them into a bowl. Add the three types of olives. Cut the spring onions and mint and add them to the salad.

Flavor it with a dressing of salt, vinegar and olive oil.

Sprinkle it with freshly ground black pepper. Serve the salad garnished with fresh mint and mint sprigs.
