  • goose liver - 9 oz (250 g) fresh
  • bread - about 5 - 6 thin slices of baguette
  • coarse salt - by taste
  • black pepper - by taste
  • jam - optional (optional)

How to make

Cool the goose liver well and when it has set well, clean it of visible streaks on the surface. Cut it into 2 cm pieces and leave it at room temperature to relax for about 20 minutes.

Sprinkle it with black pepper and very little salt and bake it in a non greased pan for a minute on each side over high heat.

Leave it onto kitchen paper or in a plate, which has been preheated in the microwave to keep the delicacy warm. In the part of the fat that the goose liver has separated in the pan, bake the bread slices. They will absorb it and will become very tasty.

Place a piece of goose liver on each slice and sprinkle them with coarse salt and more black pepper, if desired.

Serve the bites warm and you can perfectly combine them with caramelized onions or jam of your choice (blueberries or oranges would be most suitable, balsamic reduction is also a good choice).
