Ingredients

  • goose liver - 5.3 oz (150 g)
  • cream - 7 oz (200 g) 35% fat
  • oporto - 4 tbsp (60 ml) dessert wine or plain white wine
  • star anise - 1 pc.
  • salt - 1 tsp.
  • black pepper - 2 pinches
  • gelatin - 1 tsp (5 g) or 2 - 3 sheets

  • brown sugar - 1 1/3 tbsp (20 g)

How to make

Cut the peeled and cleaned apples into small pieces. Drizzle them with the sweet dessert wine, sprinkle them with sugar and cinnamon and put them on medium heat for 5 minutes, or until the pieces of fruit are caramelized.

In beautiful glass cups put a spoon - two of this mixture and save the rest for decoration at the end.

Start making the panna cotta. It will be non-standard and different from what we imagine under the name of this dessert. In this case, we will not serve it as a dessert, but a luxury gourmet appetizer. Easy and very effective.

Heat the wine over medium heat along with the star anise. When the bubbles start to come out, boil it for a minute and a half - two, in order to absorb the flavors nicely.

Clean the goose liver, cut it into pieces and add it to the wine, by removing the star anise beforehand. Immediately remove it from the heat, add the cream, salt and black pepper and puree until a smooth mixture is obtained.

Place the panna cotta mixture back onto the heat on a minimum to medium heat or for safety you can put in a water bath without the temperature exceeding 170°F (75 degrees).

Boil it for 10 minutes, while stirring almost at all times, then remove the cookware from the heat and leave it for 2-3 minutes, during which you can hydrate the gelatin.

Dissolve the prepared hydrated gelatin in the warm mixture, mix well and let it stand, as it is in the dish - for 10-15 minutes.

After this time, distribute it into the cups along with the apples, without filling them to the top, to make them more beautiful and elegant.

Allow the panna cotta to cool and refrigerate it until it has set. Cover each cup with a lid or wrap it with cling film.

Garnish the finished great appetizer with the rest of the fragrant caramelized apples. Serve this amazing goose liver panna cotta with apples.
