How to make
Melt the chocolate with the butter in a water bath. Leave the liquid chocolate to cool.
Beat the yolks with the sugar, until a nice cream is obtained.
Separately beat the egg whites very well.
Pour the baileys with the mascarpone over the yolks and mix everything gently. Pour the liquid chocolate and when the mixture is homogeneous, add half of the beaten egg whites.
Stir with gentle swirling motions and use a silicone spatula. Add the remaining egg whites and mix, until a nice chocolate cream is obtained.
Distribute the mixture into bowls and sprinkle it with chocolate sprinkles. Refrigerate them for a few hours.
The chocolate creams with mascarpone and baileys are ready.
