How to make
Cut and put the parsnips, onion, butter and curry in a pot and stew them for about 5 minutes. Pour 600 ml of warm water and when it boils, crumble the broth in it.
Cover it partially with a lid and leave it to boil over low heat until the vegetables soften. Blend the soup.
Add the cream and bring it a boil again. Serve the vegetable soup with finely chopped fresh parsley and toasted slices of bread or croutons.
The parsnip soup with curry is very tasty and warming.
