"We had to go all the way to India to bring you back this tasty pickle recipe."

Ingredients

  • onions - 6 - 8 large heads, chopped
  • carrots - 17.5 oz (500 g), grated
  • green tomatoes - 8, peeled and diced
  • zucchini - 2 lb (1 kg), cut
  • syrup - 2 cups, light, corn
  • wine vinegar - 4 cups
  • salt - 2 tablespoons
  • coriander - 1 tablespoon, ground
  • ginger - 2 tsp, crushed
  • paprika - 1 tsp
  • cumin - 1/2 tsp, ground

How to make

Mix all the ingredients in a pot. Put them to boil over medium heat. Reduce the heat and cook on low heat for 5 minutes.

Distribute the vegetables evenly in 6 jars of 17 fl oz (500 ml) each. Pour marinade on top. Stir with a non-metallic object to remove all the air bubbles.

Close the jars and boil them in a water bath for 15 minutes.
