How to make
Cut the cleaned and washed pumpkin into cubes. Soak them for 2 hours in the slaked lime solution, which is made from 1.5 gal (5 liters) of water and 2/3 cup (150 g) of slaked lime.
Then rinse well under running water, drain them and make a sugar syrup by boiling the sugar and remaining 4 1/5 cups (1 liter) of water in the meantime. Add pumpkin to the boiling syrup and cook until it thickens.
Shortly before removing from the heat, mix in the vanilla and citric acid. Distribute into jars, then store in a cool place.
