How to make
Boil the potatoes, leaving them hard. Grate them on a grater, along with the carrot and onion. Clean the spinach and blanch it in boiling water for a few minutes. Drain well and chop it finely.
Cut the peppers into fine elongated strips and mix all the vegetables in a bowl. Season with salt and pepper, add a little oil and break 2 eggs. Add some of the mush from the flour mixed with the milk, to get a slightly liquid consistency for the vegetable mixture.
Using a ladle, scoop the mixture and pour it onto a greased and heated teflon pan. Sprinkle each pancake with some breadcrumbs and once baked on one side, carefully turn it over to the other.
