How to make
Let the oven preheat to 320°F (160 degrees). Grease 4 heat resistant baking bowls or cups with a capacity of 1 cup (200 ml) with a little oil.
Grate or finely chop the apple without peeling it. Mix it with the rum, lemon juice, brown sugar and raisins.
Beat the butter along with the powdered sugar, a pinch of salt and the grated vanilla pod. Once you get a fluffy cream, add the eggs one by one, while beating constantly. Until one is beaten well, do not add the second.
Pour the spelt flour in portions along with the baking powder and mix until a homogeneous mixture is obtained. Finally, pour the mixture with the grated apples and beat for a few more seconds.
Pour it into cups (cupcake tins) and bake the cupcakes for about 20 minutes or until they're fully baked.
