How to make
Prepare the syrup by putting the water and sugar over medium heat. Cut the oranges into thin circles and as soon as the sugar has melted, put them inside. Let the syrup boil for 10-15 minutes, by reducing the heat a little. The oranges should soften and release all of their aroma, but they should not get mushy and break down.
Remove the cookware from the heat, take out and strain the fruit slices and set that aside.
In a bowl, beat the eggs with the sugar until they turn white and almost triple in volume. Sift the flour and baking powder directly on them and mix gently with a wooden spoon.
Add the melted butter, almonds, cardamom seeds and grated orange peel and stir again.
Cover a round baking pan with a diameter of 9.8″ (25 cm) with baking paper, aluminum foil or just grease it profusely.
Arrange the orange circles on the bottom and walls of the baking pan, by pressing them lightly, so that they stick together. Pour the cake mixture over them and bake at 340°F (170 degrees) in a preheated oven for about 40-45 minutes or until the cake is fully baked.
Remove it from the oven and allow to cool slightly on a wire rack (4-5 minutes), then turn it over and pour the syrup over it.
Allow it to cool completely before serving it.
The fruit cake is suitable for a light dessert with its fresh and unobtrusive aroma! Its texture is tender and melts in your mouth.
