Ingredients

  • spinach - 10.5 oz (300 g)
  • potatoes - 1 large potato (300 g)
  • garlic - 1 clove
  • spring onion - 1 stalk
  • eggs - 3 pcs.
  • goat cheese - 7 oz (200 g)
  • olive oil - 2 - 3 tbsp.
  • lemon juice - 1 - 2 tbsp.
  • black pepper - by taste
  • salt - by taste

How to make

Boil the potato in salted water. It should remain firmer, not soft boiled.

Heat olive oil over low heat and put the garlic in it, which is cut into slices and the chopped sping onion. When it starts smelling nice, add the spinach, which has been cleaned from the stems, washed and chopped. Add a little salt, stew until it softens and remove it from heat.

In a bowl, grate the potato, once it has almost cooled. Add the spinach, which is also almost chilled. Crack one XL egg (or two small ones). Add salt and season with black pepper and a teaspoon of lemon juice. Mix well until a homogeneous mixture is obtained.

In muffin tins or convenient baking cups, which have been greased in advance or covered with aluminum foil (also greased so that it does not stick), pour the mixture and form nests.

Inside each nest, place pieces of goat cheese and on top, either an egg yolk or just an egg white to make them more colorful. If necessary, use more eggs than the amount in the recipe, depending on how large your molds and nests are.

Bake them in a preheated oven at 390°F (200 degrees) for 10-15 minutes or until the eggs form a crust.
