Ingredients

  • spinach - 2.5 oz (70 g)
  • eggs - 3 pcs.
  • fresh garlic - 2 stalks
  • red peppers - 2 pcs. (sweet peppers)
  • parsley - 4 stalks
  • tomatoes - 1 pc. (small/medium)
  • black pepper - 2 - 3 pinches
  • salt - 3 pinches
  • oil - 8 tbsp.

How to make

Peel and chop the peppers and fresh garlic. Peel the tomato, grate it and finely chop the parsley.

If you're using fresh spinach, wash and cut the leaves and if you're using frozen, defrost it, strain it from the water and only then weigh it and cut it.

Fry the fresh garlic and spinach in hot oil with a pinch of salt, then add the peppers and cook them until they soften.

Add the grated tomato and parsley and stir briefly.

Beat the eggs and stir them for a minute or two at most or until they're fully cooked.

Season the stir fry with a little more salt and black pepper and serve it.
