Fry the leeks (if you want the dish to be lower in calories and dietary, cook it in a lightly greased non-stick pan or you can even not add any fat at all).
Once they turn lightly brown, add the tomatoes (cut into small cubes or canned) or add tomato puree.
Add the spices and peas. Leave the dish to simmer until the tomato puree evaporates.
Add the cottage cheese and after about 1-2 minutes - add the eggs. Stir until it's done.
Serve your vegetable stir-fry warm.
