Ingredients

  • For the dough
  • butter - 4.4 oz (125 g)
  • sugar - 3.5 oz (100 g)
  • vanilla sugar - 1 tsp (5 g)
  • eggs - 1 pc (medium)
  • flour - 8.8 oz (250 g) type 500
  • baking powder - 1 tsp (5 g)
  • salt - 1 pinch
  • butter - to grease the tin
  • flour - to roll out the dough
  • For the Filling
  • apples - 1.7 lb (800 g)
  • cinnamon - 1 pinch
  • lemon juice - 3.4 fl oz (100 ml)
  • for the Crust
  • butter - 4.4 oz (125 g) at room temperature
  • sugar - 2.8 oz (80 g)
  • vanilla sugar - 2 tsp (10 g)
  • flour - 7 oz (200 g) type 500
  • salt - 1 pinch

How to make

Knead the butter, sugar, vanilla sugar, egg, flour, baking powder and salt to a smooth dough.

Wrap the dough in cling film and chill for 60 minutes.

Preheat the oven to 360°F (180 degrees).

Take the dough out of the fridge. Roll it out on a slightly floured surface, to a size slightly larger than your spring baking tin.

Place the dough into the tin and press it gently with your fingers to achieve a rim 1.2″ (3 cm) high.

For the filling: Peel and core the apples and dice them finely. Mix them with the cinnamon and lemon juice into a bowl. Arrange the apples onto the dough.

For the crumble: Mix the butter, sugar, vanilla sugar flour and salt, and arrange it on top of the filling, by crumbling it with your fingers or shredding it.

Preheat the oven to 360°F (180 degrees) and bake for 55-60 minutes.

Allow it to cool completely, before you remove the tin.

Serve with vanilla ice cream or whipped cream.
