"A very light and very delicious spring soup, one that`s a favorite for all ladies on a diet."

Ingredients

  • zucchini - 1 medium
  • onions - 1 head
  • oil - about 2/5 cup (100 ml)
  • yoghurt - 3 tablespoons
  • rice - 2 tablespoons
  • salt - 1 tsp
  • paprika
  • parsley

How to make

Clean, peel and cut the zucchini into small pieces with a knife. In 4 1/5 cups (1 liter) of boiling water, put salt, oil and the chopped onion.

After a few minutes, throw in the zucchini, the washed rice and a little paprika for color. Boil the soup for 20 minutes, finally add the beaten yoghurt and chopped parsley.
