Clean, peel and cut the zucchini into small pieces with a knife. In 4 1/5 cups (1 liter) of boiling water, put salt, oil and the chopped onion.
After a few minutes, throw in the zucchini, the washed rice and a little paprika for color. Boil the soup for 20 minutes, finally add the beaten yoghurt and chopped parsley.
