How to make
Roast the red peppers in the oven. Cut the remaining vegetables. When they are roasted, set them aside to cool.
Fry the leeks, garlic and hot peppers in oil.
Peel the roasted peppers and clean them from the stalks and seeds. Cut them. Fry them along with other vegetables. Add the tomatoes and season them.
When they are ready, sprinkle them with parsley and stir the spicy red peppers.
