How to make
If using dried peppers, clean them from seeds, top them with water and boil them until soft. Peel the skins and mix them with the crushed garlic with salt, grated onion, parsley, salt to taste.
Grind everything into a smooth paste, or blend in a food processor. Add the oil gradually, while stirring, to the vegetable pasta. Finally, season to taste with vinegar or lemon juice. Pour it in small jars.
Top each with hot oil and close the jars. Store in a cool place. This can be served with dishes with beans, grilled meat or as a component certain spicy sauces.
You can also use it as a base for feta cheese sandwiches.
