How to make
First prepare the broth - the carrots, parsnips, potatoes and garlic are peeled and are placed in a pot, filled with water, to boil.
Leave them to simmer for about 45 minutes or until they're almost a mushy. The vegetables are then removed and the broth is filtered.
The lamb shank is washed very well and dried with a towel.
Put as much fat as you want in a deep pan and once it heats up, add the shank to seal it - for about 1-2 minutes on each side.
Grab a colander and place it on the pot with the broth. The meat is placed in the colander, after which it is covered with two layers of cooking foil.
The hob is turned on to medium heat. Allow it to stew for about 2-3 hours. When the meat is taken out, it does not have to be completely cooked, because it has to be baked in the oven.
Melt the butter, add salt, pepper and oregano.
After the meat is removed from the stove, carefully spread it with this mixture, transfer it into a baking pan and add 1-2 cups of the broth.
Place it in a preheated oven until the lamb is stewed and aquires a nice color on both sides.
The Stewed Lamb Shank is ready.
