"Quinoa salad with almond pesto and peas - we left you speechless, right"

Ingredients

  • quinoa - 5.3 oz (150 g)
  • peas - 3.5 oz (100 g) frozen
  • olive oil - 2 tbsp (30 ml)
  • salt - 1 level top tsp. (or by taste)
  • celery - 1/2 stalk
  • For the almond pesto
  • raw almonds - 2.8 oz (80 g)
  • fresh basil - 0.5 oz (15 g)
  • fresh coriander - 0.5 oz (15 g)
  • fresh parsley - 0.35 oz (10 g)
  • olive oil - 4 tbsp (60 ml)
  • honey - 1 tsp.
  • black pepper - 2 pinches
  • salt - 1 tsp.
  • lemon juice - 2 tbsp (30 ml)

How to make

Place a pot of 2 cups of water, 2 tbsp of olive oil and a pinch of salt on the hob. Once the water boils, pour the quinoa and boil it for 8 minutes under a lid.

Add the peas and boil for another 8 minutes or until both products are fully cooked. The water should be completely absorbed, but if there is any left, strain it through a fine strainer and cool the food under running water to stop the cooking process. Allow it to cool completely.

Meanwhile, prepare the pesto. You can do this by chopping the nuts and fresh spices finely or blend them at medium speed in a blender for a short time. Add olive oil, lemon juice, honey, black pepper and salt and stir.

Mix the quinoa and peas with the aromatic pesto and add the finely chopped celery.

Cool the vegetable salad before serving it.
