Ingredients

  • shrimp - 12 pcs. medium/large size
  • quinoa - 4.2 oz (120 g)
  • green peppers - 1 pc.
  • yellow peppers - 1 pc.
  • lime - 2 pcs.
  • black pepper - 2 pinches, freshly ground
  • olive oil - about 3 1/3 tbsp (50 ml)
  • salt - by taste (for flavoring the salad + for cooking the shrimp)

How to make

The quinoa salad with boiled shrimp and lime is a real delight for the palate.

Cook the quinoa for 10-12 minutes and strain it and leave it to cool in a colander.

Boil about 800 ml of water with 25-30 grams of salt dissolved in it. Separately, prepare another container of ice water, also salted.

Place the shrimp in two parts in the boiling water, so that the temperature does not drop sharply.

Cook for 3-4 minutes and remove the seafood with a slotted spoon. Immediately drop them into the cold water to stop the cooking process, so that they remain tender and retain their flavor.

Remove them from the cold water and peel them.

Cut the two types of peppers into cubes - the green adds a light and pleasant bitterness and the yellow - sweetness.

Mix the quinoa, peppers and shrimp in a bowl and season with olive oil, black pepper, salt and juice from one lime (or more, depending on your taste). Cut the other citrus into quarters and use it to garnish the portions of the quinoa salad for anyone who wants to add more juice.
