How to make
Dissolve the yeast in the water. Add the sugar and some of the flour.
Stir and leave it to foam up.
Add the oil and salt and the rest of the flour, knead a soft dough, cover it with cling film and leave it to rise.
When the dough has doubled in volume, divide it into 2.5 oz (70 g) balls and roll them out into circles.
Wrap the prepared mekitsi with a cotton cloth and leave them for 10-15 minutes.
Heat the fat and fry them until they aquire a golden color on both sides.
Take them out and place them onto kitchen paper, so that it can absorb the excess fat.
Serve them as you like - sweet or savory (or both) fluffy mekitsi with sparkling water.
