How to make
Take the pork and wrap it well with a thread or string to get an evenly thick roll. Mix the soya sauce, vodka, wine and using a syringe, inject the blend in the pork on all sides. Mix 1/2 of the mustard, honey and salt and coat the meat evenly.
Put it in the refrigerator overnight (12 hours), covered with foil. Heat a little oil in a large pan and fry the pork on all sides to change its color. Then season to taste with the remaining mixture of mustard, honey and salt and rub it well with all the other spices. Transfer the meat into a greased tray, top it with wine and some hot water.
Cover well with foil and put it to bake for about 50 minutes at 430°F (220 °C) if you want to have it slightly red on the inside. If not, keep baking until done.
Let the pork stand for about 15 minutes in the oven, after it has been turned off.
