Ingredients

  • tomatoes - 6.6 lb (3 kg)
  • red peppers - 4.4 lb (2 kg)
  • carrots - 1.3 lb (600 g)
  • eggplants - 2.2 lb (1 kg)
  • onion - 2 - 3 onions
  • garlic - 3 - 4 cloves
  • vinegar - 1/3 cup
  • sugar - 1 cup
  • oil - 1 cup
  • salt - by taste (about 3 tablespoons)
  • black pepper - by taste (ground)
  • smoked paprika - 1 tbsp.
  • parsley - 1 bunch

How to make

Peel an eggplant, cut it into pieces, season it with salt and leave it stand for a while, so its bitterness can be removed.

During this time, cook the remaining vegetables. The peppers are peeled, cleaned from their seeds and also cut into pieces.

The tomatoes and carrots are also cut into large pieces. All of the vegetables are mixed and poured into a large baking pan.

Drizzle them with oil, vinegar, salt and sugar. Bake them for three hours in a moderately heated oven, but make sure to stir them occasionally. At the end of baking, add the smoked paprika.

Once the vegetables are cooked, leave them to cool for about 10 minutes and season them with black pepper and chopped parsley. Blend them with a blender to the desired consistency. Fill them mixture into jars and sterilize them for 10 minutes.
