Ingredients

  • banana peppers - 3.5 lb (1.5 kg)
  • tomatoes - 22 lb (10 kg)
  • garlic - 3 heads
  • black pepper - peppercorns
  • chili peppers - a few to taste
  • salt - to taste
  • sugar - 2/3 cup (150 g)
  • oil - 2/3 cup (150 ml)
  • vinegar - 1/5 cup (70 ml)
  • parsley - chopped, optional

How to make

Clean tomatoes of their caps and mill them in a machine that separates the skins. Put the tomatoes in a container on the stove to boil until reduced in volume by half and you get something akin to a puree.

Add the washed banana and chili peppers, chopped garlic cloves, salt to taste, black pepper, sugar, vinegar and oil. Stir well and allow it to boil for 20-odd minutes, occasionally stirring. Remove it from the heat and mix the chopped parsley in.

Allow it to cool slightly, put it in warm and dry jars, close and sterilize them for 10 minutes.
