How to make
Choose a nice, big, lean piece of meat. With a sharp knife, make a few slices on the surface (cut it into thick slices, half-way through). Make the marinade by mixing the mustard, wine, soya sauce, honey, lemon juice with garlic, salt and pepper to taste.
Coat the meat with some of the marinade, cover and leave it in the fridge for about 12 hours. Thinly slice the cheese and bacon and distribute them in the slots of the meat.
Brush thoroughly with the rest of the marinade and wrap it well in aluminum foil. Place the meat in a cook pot and put it to bake in a moderately preheated oven for about 2 hours.
Baking time depends on the thickness of the piece of meat.
