How to make
Blend 15 cherry tomatoes (or 2-3 ordinary, pre-peeled), 1 small onion, 2 cloves of garlic, 1 hot pepper (without seeds), a few sprigs of parsley and a spring onion stalk in a blender or a food processor.
Add 1 teaspoon of balsamic vinegar, 1 tablespoon of extra virgin olive oil and the juice from half of a lime.
Season with salt, 1 teaspoon brown sugar, a pinch of cumin, fresh basil and as much black pepper as you desire.
Serve immediately or keep the sauce in a closed glass jar in the refrigerator and consume within 2-3 days.
