How to make
The fresh or frozen raspberries are mashed and put on a moderately heated hob along with the sugar and rum.
Allow it to thicken slightly and make sure to stir it occasionally.
The gelatin is dissolved in water and it is left to swell up and then it is melted in a water bath and mixed with the raspberries for this cake glaze.
Stir again and the raspberry glaze for pastries and cakes blended until it's smooth.
