  • olive oil - 1 cup (200 ml) (or sunflour oil)
  • eggs - 1 pc
  • lemon juice - 1 tbsp
  • garlic - 2 cloves
  • salt - to taste

How to make

In order to prepare an authentic Aioli sauce, you need a couple of minutes, a hand blender, and a simple technique that will give you a perfect result.

Pour the oil into a narrow container. Crack the egg, add the lemon juice and cut the garlic cloves. Toss all the ingredients into the container.

Dip the hand blender into the ingredients, making sure it is touching the bottom of the container.

Turn it on, on maximum speed and start blending while you keep it still, until the lower part of the mix starts to thicken. Start moving the blender gently along the sides of the container.

Once the liquid turns creamy at the bottom, lift the blender slowly, until all the mix becomes a white, thick sauce.

Preserve the Aioli Sauce in a sealed container, in the fridge or serve right away.

This sauce is nothing more than a garlic flavoured mayonaise, but it is full of flavour and has a very thick consistency. It accompanies perfectly a variety of main cources or starters, snacks, potatoes, fish, seafood, meat or simply toasted bread.
