How to make
Clean the mussels from the seaweed and discard those with cracked or open shells.
Put them in a saucepan on high heat with a bay leaf and a little olive oil, put a lid on the pan and shake it until they all open up - this process takes about 2 minutes.
Wait for the mussels to cool and separate them from the shells.
In a pan, over medium heat, melt the butter along with the olive oil and sauté the onion, which needs to be cut into thin crescents.
Once it softens and starts to brown a little, add the fresh garlic (chopped in bulk) and salt. Reduce the heat and leave them for about 5 minutes or until they're fully cooked and browned to your liking.
Add the mussels and fry them for a minute as well and then remove them from the heat.
Serve the dish warm with lemon slices, whose juice gives an amazing taste to the cooked mussels.
