How to make
Wash the apricots, slice them in 2 and remove their pits. Arrange them by size on a wooden or metallic sieve or grid of stainless material. Leave the apricots to dry in direct sunlight for 1 to 3 days.
Once dried, inspect them and discard the poor quality ones, while storing the good ones in bags or containers in a well ventilated place.
The bright and juicy dried apricots that are sold in stores are treated with sulfur dioxide to appear fresh, and also to protect them from harmful microorganisms. Thus treated fruits can cause headaches in some people.
Home dried apricots are slightly brownish.
