How to make
Clean chili peppers with a very slightly damp cloth, but do not soak them. If you can, cast them on a string and put them in a dry, ventilated place to dry for several months.
A faster option is to arrange them on a grid on the tray and dry them in the oven with fan (blowing) at just above 120°F (50 °C), or at most- 140°F (60 °C), until wilted.
Drying in the oven takes between 2 and 4 hours, depending on the thickness of the peppers. It’s a much faster and convenient way of drying than waiting a few months.
