Ingredients

  • eggs - 3 - 4
  • sugar - 3 - 4 tablespoons
  • yoghurt - 1 cup
  • baking soda - 1 tsp
  • salt - a pinch
  • vanilla - 1 packet
  • brandy - 2 tablespoons
  • flour - about 2 1/2 cups
  • oil - for frying
  • jam - for filling, optional

How to make

Whip the eggs with the sugar, add the effervescent yeast to the baking soda, the salt, vanilla, brandy and flour. Mix a thick dough and let it rest for 10-ish minutes. Heat plenty of oil in a deep pan.

Reduce the heat just before you begin frying. Scoop teaspoons of the dough and drop the fritters to fry in the oil. After a while, you will see how the party fritters swell and flip themselves over. If they pop during frying and leak raw dough, it means that you need to put a little more flour in the dough.

If the ready fritters are red on the outside and raw inside, it means that the heat was too high or you have added too much flour. Take out the finished party fritters with a slotted spoon and drain them on paper towels. Optionally, serve them sprinkled with powdered sugar, honey or with a bowl of chocolate sauce.

If you wish, you can fill them with your favorite jam, using an icing piping syringe.
