How to make
Peel and cut the potatoes into small cubes along with the zucchini. Peel the tomato and blend it or finely chop it.
Cut the onions and other vegetables into small cubes. Add olive oil, butter or oil into a pot and stew the carrots, onions and potatoes. After that, add all the vegetables, except for the tomatoes. Stir, pour the hot water and leave it simmer on medium heat.
Once the potatoes are soft add the tomatoes and once they start boiling add the rice and spices.
If you have fresh parsley, sprinkle before serving.
