"The perfect spring dish that I`m going to indulge in as soon as the first spinach of the season hits the markets."

Ingredients

  • spinach - 17.5 oz (500 g)
  • rice - 1 cup
  • butter - 1/5 cup (70 g)
  • yoghurt - 1 cup
  • green onions - 4 bunches
  • garlic - 3 - 4 cloves
  • salt
  • black pepper
  • vegetable broth - 1 - 2 , diluted in 1/2 cup of water

How to make

Clean the spinach, chop it up and put it in the butter to stew until soft. Add the rice, then the water, about 3 cups (including the broth).

Leave this until the rice boils well. In hot oil, fry the onion and garlic, then season them with spices.

Once the mixture has cooled down, mix it with the yoghurt and carefully add the mixture to the spinach and rice.
