How to make
Sift the flour and put it into a bowl. Add a pinch of salt, chopped into pieces cold butter, 1 teaspoon brown powdered sugar and two tablespoons of cold water.
Knead a soft buttery dough. Cover it in cling film and refrigerate it for 1-2 hours.
Cut the peaches into slices. Put them in a bowl, add the juice from one lemon, sprinkle with 1 tsp. starch, vanilla and 2.1 oz (60 g) brown powdered sugar. Mix the products very well.
Roll out the cooled dough on a piece of baking paper in a round pan. Arrange the peaches on the rolled out dough and leave about 1.2″ (3 cm) space at the ends.
Fold the 1.2″ (3 cm) end over the fruit. Spread the folded dough with milk and sprinkle with chopped almonds.
Bake the galette at 360°F (180°C) in a preheated oven with a fan on until it's nicely browned.
Leave the baked peach galette to cool on a wire rack.
Sprinkle with powdered sugar.
