How to make
Sift the spelt and buckwheat flour and mix them in a large bowl, make a well in the middle and add one egg, add the olive oil and yogurt with the soda dissolved in it, add a few drops of lemon juice, add salt and ground savory herb.
To start off with, mix it with a spoon, while adding a little white flour if the dough is sticky.
Knead a soft dough and let it rest for about 30 minutes.
With lightly greased hands, shape the bread, transfer it into a tray onto greased baking paper and make several cuts on the surface with a sharp knife.
Bake in a preheated 360°F (180°C) oven until brown.
Check the bread with a wooden skewer to see if the dough is still sticky or not. If there isn't any dough on the skewer the bread is fully baked.
After removing it from the oven, spread a little water over it, wrap it in a towel and leave it cool.
It is cut with a wavy edge bread knife and served as an addition to the main course or as a snack with butter and mixed herbs and salt.
