How to make
Pour the buckwheat flour into a bowl and pour 2 cups (500 ml) of heated water over it. Mix it and leave it aside. In the meantime, dissolve the yeast in the remaining water and a little flour.
Once it bubbles, add it to the white flour and salt. Pour in the mixture with the buckwheat flour as well. Knead a dough and let it rise for 40 min. Next, form a bread loaf and leave it to rise again.
Heat the oven to 480°F (250 °C) and put the bread in it (be sure to make several cuts along its top). Bake the bread for about 10-15 min., then reduce the oven temperature a little. After about 30 min., take out the bread and cover it with a towel. Once it cools, it's ready to eat.
