How to make
Cut the tomatoes and mash them. If desired, strain them through a strainer if you want the sauce to be finer.
Heat 4 tbsp. butter and fry briefly the finely chopped onions and garlic. Add the flour, stir until frying and add the tomato sauce, stirring constantly.
Add the wine and cook the sauce until slightly reduced - for about 10 minutes or more. Finally, season with salt and pepper to taste. You can also add a pinch of sugar to dull the sour note.
