Ingredients

  • arugula - 3 handfuls of leaves
  • tomatoes - 7 oz (200 g)
  • dried tomatoes - 2 oz (60 g) marinated
  • pine nuts - 3 tbsp.
  • baby mozzarella - 5 oz (140 g)
  • For the dressing
  • dried tomatoes - 4 tbsp. from their marinade
  • olive oil - 4 tbsp.
  • balsamic vinegar - 4 - 5 tbsp.
  • salt to taste
  • rosemary - 2 pinches, dry
  • balsamic reduction - for sprinkling

How to make

Put the arugula leaves and baby mozzarella drained from the brine in a bowl. Cut the fresh and dried tomatoes, already softened by the marinade, into relatively large pieces.

Prepare the dressing by mixing all the products for it and season the salad, mixing it well.

Transfer to a salad bowl and sprinkle with pine nuts and balsamic reduction.

Advice:

You can buy marinated dried tomatoes ready in a jar and use the marinade for dressing.

You can also make them yourself by soaking them until soft in water and then putting them in olive oil with rosemary sprigs to stay for a few hours and use the same olive oil for salad dressing.
