Ingredients

  • peppers - 4, red
  • red onion - 1 chopped
  • tomatoes - 4 medium / or 2 cups whole cherry tomatoes /
  • mushrooms - 1.1 lb (500 g)

  • olive oil - 1/4 cup.

  • oregano - 1 tsp. dried

  • salt - 1/4 tsp.

  • basil - 2 tbsp. fresh, chopped
  • olives - 2/3 cup black

This Greek recipe for mushrooms with pepper and herbs is popular and for a good reason!

This vegetable dish is prepared very easily and quickly. You can eat it as a main or as a side dish to chicken and fish.

There are so many different tastes. The mix of herbs, garlic, and olive oil looks simple but really gives the vegetables a wonderful Greek taste.

Minimal washing of dishes, because everything is in one pan and ready in 10-15 minutes.

An option to change this Greek recipe is to add skinless chicken breasts or legs, but be sure to increase the cooking time by 15 minutes.

You can replace the chicken with salmon or white fish such as cod. You can prepare them separately and add the stewed vegetables as a side dish.

For a dairy-free diet, skip the feta!

Clean the mushrooms by cutting off the end of the stem that was in the soil.

Clean the mushrooms under running water to remove any soil residue (mushrooms should not be soaked). Squeeze them and cut them into thin slices.

Meanwhile, cut the tomatoes or cherry tomatoes into four pieces. Clean the peppers from the seeds and cut them into 2 cm pieces.

Heat the olive oil in a pan. Add the onion, cut into small pieces, and the finely chopped garlic. Add the peppers and cook for about 5 minutes.

Add the tomatoes (cherries) and a pinch of salt, smoked paprika, and the herbs - oregano, thyme, (basil is added at the end of cooking). Add the mushrooms and black olives to the delicious quick dish.

Continue cooking the mushroom dish for 10 minutes, stirring occasionally, until the water from the tomatoes evaporates. Add a pinch of cayenne pepper and black pepper.

Serve the mushrooms with vegetables in Greek style hot.
