Ingredients

  • eggplants - 1
  • salt
  • black pepper
  • oil
  • for the crumbing
  • semolina - 3 tablespoons
  • corn starch - 3 tablespoons
  • flour - 3 tablespoons

How to make

Cut the peeled eggplant into round slices. Salt and allow it to drain its bitterness for about half an hour, then wash it.

Roll the eggplant slices in the semolina, corn starch, flour, salt and pepper. Fry them in hot oil. Serve with yoghurt and garlic sauce.
