How to make

Preparing homemade cotton candy requires a lot of space and special preparations. First cut off the rounded tops of a whisk, so as to obtain a handheld beater with equally long rods, arranged equidistant from each other. At the end of the counter, place the thickest possible hardcover book you can find.

Attach two wooden spoons in the middle of it, between the pages, to stick out from both ends. Attach them with a rubber band, to keep them tight and prevent them from falling out. Wrap the entire book in a plastic bag to keep it clean. The book needs to be at the end of the counter and the wooden spoons need to stick out above the floor.

Cover the floor with plenty of newspapers to keep your floor clean. In a pot on the stove, heat the sugar, glucose and water on medium heat. Use the special sugar thermometer to measure the temperature. Once it reaches exactly 300°F (150°C), pull the pot from the heat, carefully transfer the mixture into a heat resistant glass bowl.

Stir in the essence and a little food coloring to get the color desired for your cotton candy. Carefully grab the cut whisk and immerse it in the mixture. Drain slightly for a second or two and make circular motions with the whisk around the wooden spoons.

What you're going to get is thin sugar filaments. Continue dipping the whisk in the mixture and waving it around the spoons. The whisk needs to be about 17 1/2″ (45 cm) above the wooden spoons. You need to wave it in wide and rapid motions over the spoons, so that the sugar filaments distribute evenly. Then wrap the cotton candy around a wooden stick.
