How to make
Wash the rice, until the water becomes clear, pour 1 cup of water, just enough to cover it and leave it for 1 hour.
The almonds are covered with water and left overnight.
After this time the almonds and raisins are covered with hot water, the skin of the almonds is removed and some of them are cut into pieces. The raisins are strained.
Heat the milk, add the vanilla, sugar, saffron, cinnamon, cardamom and rice. Boil, until a cream is obtained over very moderate heat to simmer, by stirring constantly. The mixture should look like porridge.
When it is fully cooked, add the almonds and raisins. Distribute it into bowls.
The rice pudding is decorated with whole almonds on top.
