How to make
Peel the pears without removing their stems to make them more beautiful. It is best for them to be firmer, not overripe.
In a pot, heat the water with the sugar, honey, butter and mint. As soon as it boils and the sugar has melted, pour the wine and add the pears. You will see that the liquid does not cover them, but don't worry. Boil for 8-10 minutes, by turning them occasionally and pouring water over the top with a spoon.
Remove them from the heat and leave them for a few minutes to allow the pears to soak up the sauce, then remove and strain the excess.
Melt the chocolate with the butter and a few mint leaves for flavor in a water bath. Bathe the pears liberally with the chocolate, using a spoon or dropping them directly into the bowl of chocolate mixture. Be careful, because they have softened and they can easily fall apart.
Place them on a plate and refrigerate them, in order for the chocolate coating to harden.
Serve them garnished with fresh mint leaves.
